Description
This crockpot hamburger potato casserole is easy, filling, and hands-off. It uses simple ingredients and cooks into a cheesy, comforting meal everyone enjoys.
Ingredients
- 1 lb ground beef
- 4–5 medium russet or Yukon gold potatoes, thinly sliced
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese, divided
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions
- Cook ground beef and onion in a skillet until browned; drain excess fat.
- Thinly slice potatoes about 1/8 inch thick.
- Layer half the potatoes in the crockpot, then half the beef mixture, then some cheddar cheese. Repeat layers.
- Whisk cream of mushroom soup, milk, garlic powder, salt, and pepper. Pour over the layers.
- Cook on LOW 6–8 hours until potatoes are tender.
- Sprinkle remaining cheddar on top 15 minutes before serving.
- Garnish with parsley or chives.
Notes
Slice potatoes evenly for best results. Use lean beef or drain well to avoid grease. Add paprika or Worcestershire for extra flavor. Frozen vegetables can be layered for a one-pot dinner.
