Description

A comforting and easy-to-make dish that combines bold taco flavors with hearty pasta, perfect for busy families.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups pasta (such as rotini or penne)
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, cilantro


Instructions

  1. In a skillet over medium heat, brown the ground beef and drain any excess fat. Stir in the taco seasoning.
  2. In a crockpot, combine the seasoned ground beef, pasta, beef broth, diced tomatoes, and corn.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the pasta is cooked.
  4. Stir in the cheese until melted.
  5. Serve hot with optional toppings.
