Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups pasta (such as rotini or penne)
- 4 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, cilantro
Instructions
- In a skillet over medium heat, brown the ground beef and drain any excess fat. Stir in the taco seasoning.
- In a crockpot, combine the seasoned ground beef, pasta, beef broth, diced tomatoes, and corn.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the pasta is cooked.
- Stir in the cheese until melted.
- Serve hot with optional toppings.
