Description
Delicious and healthy Dark Chocolate and Sea Salt Nut Bars that combine rich dark chocolate with crunchy mixed nuts for a satisfying snack.
Ingredients
- 2 1/2 cups unsalted nuts of choice (3/4 cup cashews, 3/4 cup peanuts, 1 cup almonds)
- 1/2 cup puffed rice
- 1/4 cup brown rice syrup
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
- 1 cup dark chocolate chips
- 2 teaspoons coconut oil
- Optional: flaky salt for topping
Instructions
- Preheat your oven to 325°F (160°C).
- Spread the nuts into a single layer on a rimmed sheet pan. Bake for 5-8 minutes until fragrant and lightly browned.
- Line an 8×8-inch pan with parchment paper and set it aside.
- In a large mixing bowl, combine the nuts and puffed rice, tossing them together.
- In a microwave-safe bowl, add the brown rice syrup and microwave for 30 seconds to loosen it. Whisk in the vanilla extract and salt until well combined.
- Pour this mixture over the nut and rice blend, stirring until everything is evenly coated.
- Transfer the nut mixture to the prepared pan and press it into an even layer.
- Bake for 18-20 minutes. Once done, let it cool for about 30 minutes before slicing.
- Cut the bars in half lengthwise, then cut each half into 5-6 thin bars. Allow them to cool completely.
- For the chocolate coating, add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted.
- Dip the bottom of each bar into the melted chocolate and place them on a baking sheet lined with parchment paper.
- Drizzle the tops with more melted chocolate and sprinkle with flaky salt. Refrigerate until the chocolate sets, then enjoy!
Notes
Feel free to customize the nuts according to your preferences. If you prefer a sweeter bar, add a little honey or maple syrup.
