Description
A light and fluffy yogurt bread that’s low in carbs and high in protein, perfect for guilt-free snacking.
Ingredients
- 6 large eggs
- 0.5 cup full-fat Greek yogurt (unsweetened and plain)
- 1 tablespoon baking powder (aluminum-free)
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the eggs and Greek yogurt until smooth.
- Add the melted butter (or coconut oil) and mix well.
- Stir in the baking powder, salt, and xanthan gum (or psyllium husk powder) until fully combined.
- If you’re using almond flour, gently fold it into the mixture.
- Pour the batter into the prepared loaf pan.
- Bake for about 30-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack.
Notes
Serve plain or with favorite toppings. Great for sandwiches or paired with low-carb soups.
