Ingredients
- 3 cups cooked and shredded chicken (rotisserie chicken works well)
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10.5-ounce) can cream of mushroom soup
- 1 cup sour cream
- 1/2 cup milk
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1 (6-ounce) box of stuffing mix (such as Stove Top)
- 1/2 cup melted butter
- 1 1/2 cups chicken broth
- 1 cup shredded cheddar cheese (optional)
- 1/2 cup frozen peas (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray.
- In a large bowl, mix together the shredded chicken, both cans of soup, sour cream, milk, onion powder, garlic powder, thyme, salt, and pepper until smooth.
- Spread the chicken mixture evenly in the prepared baking dish.
- In another bowl, combine the stuffing mix with melted butter and chicken broth, stirring well before spreading it evenly over the chicken layer. Optionally, sprinkle with shredded cheddar cheese.
- Bake uncovered for 35-40 minutes until the top is golden brown and bubbling.
- Let the casserole rest for 5-10 minutes before serving.
Notes
Using rotisserie chicken makes this recipe quick and easy. Feel free to mix in other veggies like carrots or bell peppers. Adjust seasonings to add more flavor as desired.
