Description

Delightful cookies that capture the spirit of spring, combining chocolate cookies with chow mein noodles and topped with pastel candy eggs.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups chocolate-coated chow mein noodles
  • 1 cup chocolate chips (for the center)
  • Pastel candy eggs (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chocolate-coated chow mein noodles until evenly distributed.
  7. Using a tablespoon, drop cookie dough onto the prepared baking sheet, spacing them a few inches apart.
  8. Bake for 10-12 minutes or until set.
  9. While still warm, use your thumb to make an indentation in the center of each cookie.
  10. Melt chocolate chips in the microwave and fill each indentation with melted chocolate.
  11. Top with pastel candy eggs.
  12. Allow to cool completely before serving.

Notes

Store in an airtight container at room temperature for 4-5 days, or freeze with parchment paper between layers.
