Delightful cookies that capture the spirit of spring, combining chocolate cookies with chow mein noodles and topped with pastel candy eggs.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups chocolate-coated chow mein noodles
- 1 cup chocolate chips (for the center)
- Pastel candy eggs (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
- In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the chocolate-coated chow mein noodles until evenly distributed.
- Using a tablespoon, drop cookie dough onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 10-12 minutes or until set.
- While still warm, use your thumb to make an indentation in the center of each cookie.
- Melt chocolate chips in the microwave and fill each indentation with melted chocolate.
- Top with pastel candy eggs.
- Allow to cool completely before serving.
Notes
Store in an airtight container at room temperature for 4-5 days, or freeze with parchment paper between layers.
