Delicious and easy Crockpot Chicken Fajitas that are customizable and perfect for busy families.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 packet fajita seasoning
- 1 can diced tomatoes with green chilies
- Tortillas for serving
- Optional toppings: sour cream, guacamole, cheese, cilantro
Instructions
- Place the chicken breasts, sliced bell pepper, sliced onion, fajita seasoning, and diced tomatoes in the slow cooker.
- Stir to combine all the ingredients well.
- Cover and cook on low for 360 minutes (6 hours) or on high for 240 minutes (4 hours) until the chicken is fully cooked.
- Once done, shred the chicken in the slow cooker with two forks.
- Serve the shredded chicken mixture on tortillas with your choice of optional toppings.
Notes
For extra flavor, marinate the chicken in fajita seasoning and lime juice beforehand. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.
