Ingredients
- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple, drained
- 1 cup coconut flakes
- 1 cup whipped topping
- 1/2 cup sugar
- 3 eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, mix the cake mix, crushed pineapple (with juice), eggs, vegetable oil, and vanilla extract until well combined.
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- In another bowl, combine sugar, coconut flakes, and whipped topping to make the frosting.
- Once the cake has cooled, spread the coconut mixture on top.
- Chill in the refrigerator for at least 120 minutes before serving.
Notes
Make sure to drain the crushed pineapple well to avoid a soggy cake. Chill the cake for enhanced flavor and freshness.
