Description

A light and flavorful one-pot soup, packed with nutrients from vegetables and chicken, perfect for a quick lunch or dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 pound cooked chicken breast, shredded
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until they are softened.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the shredded chicken and orzo. Simmer until the orzo is cooked, about 10-12 minutes.
  5. Stir in the lemon juice and season the soup with salt and pepper.
  6. Serve the soup garnished with fresh parsley.

Notes

For added flavor, use homemade chicken broth. You can make the soup vegetarian by using vegetable broth and omitting the chicken.
