Description
A light and flavorful one-pot soup, packed with nutrients from vegetables and chicken, perfect for a quick lunch or dinner.
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 pound cooked chicken breast, shredded
- 1 cup orzo pasta
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until they are softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Add the shredded chicken and orzo. Simmer until the orzo is cooked, about 10-12 minutes.
- Stir in the lemon juice and season the soup with salt and pepper.
- Serve the soup garnished with fresh parsley.
Notes
For added flavor, use homemade chicken broth. You can make the soup vegetarian by using vegetable broth and omitting the chicken.
