Easy Shepherd’s Pie Casserole

Description

A comforting dish that combines ground beef, vegetables, and creamy mashed potatoes in a delicious casserole.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook them until they are softened, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let this mixture simmer for 5-7 minutes until it thickens slightly.
  5. Transfer the beef mixture to a casserole dish, spreading it out evenly.
  6. Top the beef with prepared mashed potatoes, spreading them out to cover the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if using.
  8. Bake the casserole in the preheated oven for 20-30 minutes, until the top is golden and bubbly.
  9. Allow it to cool for 5 minutes before serving.

Notes

Serve warm with a salad or crusty bread. Leftovers can be stored for 3-4 days in the refrigerator or up to 3 months in the freezer.
