Description
A healthy, comforting soup packed with fresh vegetables and rich in flavor.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables start to soften, about 5-7 minutes.
- Stir in the garlic, zucchini, and bell pepper, and cook for another 2-3 minutes.
- Pour in the vegetable broth and diced tomatoes. Add thyme, basil, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 20 minutes, or until vegetables are tender.
- Stir in the spinach and cook for an additional 2-3 minutes until wilted.
- Adjust seasoning as needed and serve hot.
Notes
You can add a sprinkle of fresh herbs or a dollop of sour cream on top for added flavor. It pairs well with crusty bread or a simple salad.
