Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables start to soften, about 5-7 minutes.
  2. Stir in the garlic, zucchini, and bell pepper, and cook for another 2-3 minutes.
  3. Pour in the vegetable broth and diced tomatoes. Add thyme, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for about 20 minutes, or until vegetables are tender.
  5. Stir in the spinach and cook for an additional 2-3 minutes until wilted.
  6. Adjust seasoning as needed and serve hot.

Notes

You can add a sprinkle of fresh herbs or a dollop of sour cream on top for added flavor. It pairs well with crusty bread or a simple salad.
