A simple and delicious recipe for a whole roasted chicken that is juicy, flavorful, and has crispy skin.


Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 lemon, halved
  • Fresh herbs (such as rosemary or thyme)
  • Vegetables (such as carrots, potatoes, or onions – optional)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub the olive oil all over the chicken and season generously with salt and pepper.
  4. Stuff the cavity of the chicken with the halved lemon and fresh herbs.
  5. If desired, add chopped vegetables around the chicken in the pan for added flavor.
  6. Roast the chicken in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  7. Let the chicken rest for 10-15 minutes before carving.
