Ingredients
- 1 whole chicken (about 4-5 lbs)
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 lemon, halved
- Fresh herbs (such as rosemary or thyme)
- Vegetables (such as carrots, potatoes, or onions – optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the olive oil all over the chicken and season generously with salt and pepper.
- Stuff the cavity of the chicken with the halved lemon and fresh herbs.
- If desired, add chopped vegetables around the chicken in the pan for added flavor.
- Roast the chicken in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving.
