A delicious twist on a classic brunch dish, combining eggs, Canadian bacon, and English muffins in a simple casserole.
Ingredients
- 2 cups milk
- 8 large eggs
- 3 stalks green onions, chopped
- 1 teaspoon onion powder
- 1 teaspoon salt
- ¾ pound Canadian bacon, diced
- 6 English muffins, diced
- ½ teaspoon ground paprika
- 1 cup milk (additional)
- 1 0.9 oz package hollandaise sauce mix
- ¼ cup butter
Instructions
- Grease a 9×13-inch baking dish.
- Whisk together 2 cups of milk, eggs, green onions, onion powder, and salt until blended.
- Layer half of the diced Canadian bacon in the baking dish, then all the pieces of English muffins, followed by the remaining bacon.
- Pour the egg mixture evenly over the layered ingredients.
- Cover the dish and refrigerate overnight to let the flavors meld.
- Preheat your oven to 375°F (190°C) the next day. Sprinkle paprika over the top.
- Cover the dish with foil and bake for 30 minutes.
- Uncover and bake for an additional 15 minutes.
Notes
For a creamier texture, consider adding extra milk or a splash of cream to the egg mixture. For a crispy top, you can broil it for a few minutes after baking.
