Ingredients
- 4 chicken breasts
- 8 oz mushrooms, chopped
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add chopped mushrooms and garlic, cooking until mushrooms are soft.
- Stir in spinach and cook until wilted.
- Remove from heat and mix in cream cheese, Parmesan cheese, thyme, salt, and pepper.
- Make a pocket in each chicken breast and stuff with the mushroom mixture.
- Place the stuffed chicken breasts in a baking dish. Brush with olive oil and season with additional salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Let rest for a few minutes before serving. Enjoy!
