Description

A comforting French-style beef stew rich in flavor, perfect for cooler days.


Ingredients

  • 2 pounds of beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.
  2. Remove the beef and set aside. In the same pot, add onion and garlic, sautéing until translucent.
  3. Stir in the carrots and potatoes, cooking for a few minutes.
  4. Add the beef back to the pot along with red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 120-180 minutes until the meat is tender.
  6. Adjust seasoning if necessary, remove bay leaves, and serve hot, garnished with fresh parsley.

Notes

For deeper flavor, let the beef brown well before adding other ingredients. For thicker stew, add a cornstarch slurry or let it simmer longer with the lid off. Fresh herbs like thyme and rosemary can enhance the aroma.
