Ingredients
- 1 can chickpeas, drained and rinsed
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 4 cups vegetable broth
- 1 teaspoon cumin

- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and carrots, sauté until the onion is translucent.
- Add the minced garlic and cumin, cooking for an additional minute.
- Stir in the chickpeas and vegetable broth.
- Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Season with salt and pepper to taste.
- Optionally, blend for a smoother texture or leave as is.
