Description

  • 1 can chickpeas, drained and rinsed
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and carrots, sauté until the onion is translucent.
  3. Add the minced garlic and cumin, cooking for an additional minute.
