Description
Tender chicken and creamy garlic parmesan potatoes made effortlessly in the crockpot. A family-friendly dinner favorite.
Ingredients
4 boneless, skinless chicken breasts
1.5 lbs baby potatoes, halved
1 cup chicken broth
1/2 cup grated parmesan cheese
4 cloves garlic, minced
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
2 tbsp olive oil
Fresh parsley, chopped
Instructions
1. Wash and halve the baby potatoes. Mince garlic.
2. Season chicken with olive oil, Italian seasoning, salt, pepper, and red pepper flakes.
3. Layer potatoes in crockpot, then place chicken on top.
4. Pour chicken broth over everything.
5. Add garlic and parmesan on top.
6. Cook on low 6–7 hours or high 3–4 hours.
7. Check chicken reaches 165°F and potatoes are tender.
8. Serve with sauce spooned over top and parsley garnish.
Notes
Store leftovers up to 3 days in the fridge or 2 months in the freezer.
Reheat gently with a splash of broth.
Add heavy cream or cream cheese for extra creaminess.
