Ingredients
- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 tablespoons Greek seasoning
- 1 Cucumber, chopped
- 1 Tomato, chopped
- 1 Red onion, chopped
- 1 Bell pepper, chopped
- 1/2 cup Feta cheese, crumbled
- 4 cups Lettuce
- 1/2 cup Tzatziki sauce
- 1 Lemon, juiced
- 1 cup Rice or quinoa (optional)
Instructions
- Preheat the grill or oven to medium-high heat.
- Marinate the chicken breasts in olive oil and Greek seasoning for at least 30 minutes.
- Grill or cook the chicken until fully cooked, about 6-7 minutes per side.
- While the chicken cooks, chop the cucumber, tomato, red onion, and bell pepper.
- Assemble the chicken on a bed of lettuce, then top with the chopped veggies and crumbled feta cheese.
- Drizzle with tzatziki sauce and a squeeze of lemon juice.
