Ingredients

  • 2 chicken breasts
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1/4 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and drained
  • 1-2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt to taste


Instructions

  1. Grill or bake chicken breasts until cooked through, then slice.
  2. In a large bowl, combine quinoa, cucumber, tomatoes, onion, bell pepper, olives, and feta cheese.
  3. To make tzatziki, mix Greek yogurt, grated cucumber, garlic, lemon juice, and salt in a bowl.
  4. Assemble bowls with a base of quinoa, topped with vegetables, sliced chicken, and tzatziki sauce.
  5. Garnish with fresh parsley, season with salt and pepper, and serve.
