  • 2 bell peppers (any color), diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Cooked rice, lettuce leaves, or taco shells for serving


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until fragrant.
  3. Add the ground turkey and cook until browned.
  4. Stir in the diced bell peppers, paprika, cumin, salt, and pepper.
  5. Cook for an additional 5-7 minutes, until peppers are tender.
  6. Serve over rice, in lettuce wraps, or as a taco filling.

Notes

For extra flavor, add in spices like chili powder or cayenne pepper. You can also add corn or black beans for more veggies.
