- 2 bell peppers (any color), diced
- 1 onion, chopped

- Cooked rice, lettuce leaves, or taco shells for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until fragrant.
- Add the ground turkey and cook until browned.
- Stir in the diced bell peppers, paprika, cumin, salt, and pepper.
- Cook for an additional 5-7 minutes, until peppers are tender.
- Serve over rice, in lettuce wraps, or as a taco filling.
Notes
For extra flavor, add in spices like chili powder or cayenne pepper. You can also add corn or black beans for more veggies.
