Ingredients
- 2 cups shredded cooked chicken (rotisserie or leftover works perfectly)
- 8 oz cream cheese, softened
- 1/2 cup buffalo sauce (adjust for spice level)
- 1/4 cup ranch or blue cheese dressing
- 1 cup shredded cheddar cheese
- Optional toppings: sliced olives, chopped green onions, tortilla chips for garnish
Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix softened cream cheese, buffalo sauce, and dressing until smooth.
- Stir in shredded chicken and half of the cheddar cheese until evenly coated.
- Spread the mixture into a small casserole dish or spoon into a hollowed mini pumpkin for a festive look.
- Top with remaining cheese and bake for 20 minutes until hot and bubbly.
- Decorate with olives for eyes, green onions for a spooky grin, or chips shaped like bat wings or a jack-o’-lantern face.
- Serve warm with celery sticks, crackers, or pita chips.
Notes
Make ahead by preparing the dip mixture up to 2 days before baking. For a less spicy version, use mild buffalo sauce or add extra ranch dressing. Store leftovers in the fridge up to 3 days and reheat until warm and melty.
