Description

Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 onion, chopped
  • 4 cloves garlic, roasted
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add diced butternut squash, roasted garlic, cumin, cinnamon, nutmeg, salt, and pepper.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20–25 minutes until squash is tender.
  4. Use an immersion blender to puree the soup until smooth; adjust seasoning if necessary.
  5. Serve warm, garnished with fresh parsley.

Notes

Serve warm with a dollop of yogurt, pumpkin seeds, or crusty bread. Store in the fridge for up to 5 days or freeze for up to 3 months. Roast garlic ahead of time, add coconut milk for creaminess, or spice it up with ginger or chili powder.
