Ingredients
- 1 medium butternut squash, peeled and diced
- 1 onion, chopped
- 4 cloves garlic, roasted
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat and sauté onions until translucent.
- Add diced butternut squash, roasted garlic, cumin, cinnamon, nutmeg, salt, and pepper.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20–25 minutes until squash is tender.
- Use an immersion blender to puree the soup until smooth; adjust seasoning if necessary.
- Serve warm, garnished with fresh parsley.
Notes
Serve warm with a dollop of yogurt, pumpkin seeds, or crusty bread. Store in the fridge for up to 5 days or freeze for up to 3 months. Roast garlic ahead of time, add coconut milk for creaminess, or spice it up with ginger or chili powder.
