Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 bell pepper, chopped
  • 1 cup shredded carrots
  • 1 cucumber, chopped
  • 1 cup red cabbage, shredded
  • 1/2 cup chopped green onions
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 1 tablespoon lime juice
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon curry powder
  • 1 tablespoon maple syrup
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine chickpeas, bell pepper, carrots, cucumber, red cabbage, green onions, and cilantro.
  2. In a separate bowl, whisk together lime juice, peanut butter, soy sauce, curry powder, and maple syrup until smooth.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with chopped peanuts and season with salt and pepper to taste.
  5. Serve chilled or at room temperature.
