Ingredients
- 1 can chickpeas, drained and rinsed
- 1 bell pepper, chopped
- 1 cup shredded carrots
- 1 cucumber, chopped
- 1 cup red cabbage, shredded
- 1/2 cup chopped green onions
- 1/4 cup cilantro, chopped
- 1/4 cup peanuts, chopped
- 1 tablespoon lime juice
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 teaspoon curry powder
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, bell pepper, carrots, cucumber, red cabbage, green onions, and cilantro.
- In a separate bowl, whisk together lime juice, peanut butter, soy sauce, curry powder, and maple syrup until smooth.
- Pour the dressing over the salad and toss to combine.
- Garnish with chopped peanuts and season with salt and pepper to taste.
- Serve chilled or at room temperature.
