A delightful and nourishing dish that combines garlic, chicken, and creamy Parmesan sauce, perfect for busy weeknights.
Ingredients
- 8 oz whole wheat penne or fettuccine
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 lb boneless skinless chicken breasts, cubed
- 1/2 tsp paprika
- 1/2 tsp Italian seasoning
- 1 tbsp whole wheat flour
- 1 cup low-sodium chicken broth
- 1/2 cup low-fat milk (1% or 2%)
- 1/2 cup plain non-fat Greek yogurt
- 1/2 cup freshly grated Parmesan cheese
- 2 cups baby spinach (optional but recommended)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil water in a large pot. Add the whole wheat pasta and cook according to package instructions. Once cooked, drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the cubed chicken breast, paprika, Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Sprinkle the whole wheat flour over the chicken mixture and stir to combine. Pour in the chicken broth and milk, stirring well. Allow the sauce to simmer and thicken for about 3-5 minutes.
- Lower the heat and stir in the Greek yogurt and grated Parmesan cheese until the sauce is creamy and well mixed.
- Add the cooked pasta and baby spinach to the skillet, tossing everything together until the spinach wilts. Adjust salt and pepper to taste.
- Spoon the delicious garlic Parmesan chicken pasta onto plates and garnish with chopped parsley before serving.
Notes
Use freshly grated Parmesan cheese for better flavor. Feel free to add your favorite vegetables like bell peppers or broccoli. Adjust the spice level with red pepper flakes if desired.
