Ingredients
- 1/2 cup pumpkin purée
- 1/4 cup almond butter
- 2 Tbsp maple syrup
- 1 tsp pumpkin pie spice
- 3 Tbsp coconut flour
- 1 cup dark or white chocolate chips
- 1 tsp coconut oil
Instructions
- In a medium bowl, mix pumpkin purée, almond butter, maple syrup, and pumpkin pie spice.
- Stir in coconut flour until the mixture firms up.
- Roll the dough into small truffle balls.
- Freeze for about 15 minutes.
- Melt chocolate with coconut oil, then dip each ball into the coating.
- Place on parchment paper and freeze again until set.
Notes
Use pure pumpkin purée (not pie mix) for best results. Chill the truffle base before coating to help chocolate stick. Store in the fridge for up to one week.
