Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup salsa verde
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup cooked quinoa or rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper.
  3. Spread the mixture evenly in a greased casserole dish.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes

Customize the recipe with additional vegetables or use leftover chicken for an easier prep. For spiciness, add jalapeños or hot sauce.
