Ingredients
- 2 cups cooked shredded chicken
- 1 cup salsa verde
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup cooked quinoa or rice
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper.
- Spread the mixture evenly in a greased casserole dish.
- Top with shredded cheese.
- Bake for 25-30 minutes, or until heated through and the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
Customize the recipe with additional vegetables or use leftover chicken for an easier prep. For spiciness, add jalapeños or hot sauce.
