Ingredients
- 2 large sweet potatoes, grated
- 1 small onion, finely chopped
- 2 tablespoons olive oil

Instructions
- Peel and grate the sweet potatoes, then place them in a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated sweet potatoes, onion, and any spices you want to add.
- Heat olive oil in a skillet over medium heat.
- Add the sweet potato mixture to the skillet, spreading it out evenly.
- Cook for about 5-7 minutes until crispy and golden brown, then flip and cook the other side for an additional 5-7 minutes.
- Season with salt and pepper to taste, and serve hot.
Notes
