Description

Ingredients

  • 2 large sweet potatoes
  • 1 small onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder, paprika


Instructions

  1. Peel and grate the sweet potatoes and onion using a box grater.
  2. Place the grated sweet potato and onion in a clean kitchen towel and squeeze out excess moisture.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the grated mixture to the skillet, spreading it evenly.
  5. Cook for about 5-7 minutes until the bottom is golden brown, then flip and cook for an additional 5-7 minutes.
  6. Season with salt, pepper, and optional spices.
  7. Serve hot as a breakfast or brunch side.

Notes

Make sure to remove as much moisture as possible from the grated sweet potatoes and onion for better crispiness. Use a non-stick skillet to prevent sticking.
