Ingredients
- 2 large sweet potatoes
- 1 small onion
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder, paprika
Instructions
- Peel and grate the sweet potatoes and onion using a box grater.
- Place the grated sweet potato and onion in a clean kitchen towel and squeeze out excess moisture.
- In a large skillet, heat the olive oil over medium heat.
- Add the grated mixture to the skillet, spreading it evenly.
- Cook for about 5-7 minutes until the bottom is golden brown, then flip and cook for an additional 5-7 minutes.
- Season with salt, pepper, and optional spices.
- Serve hot as a breakfast or brunch side.
Notes
Make sure to remove as much moisture as possible from the grated sweet potatoes and onion for better crispiness. Use a non-stick skillet to prevent sticking.
