Description
Delicious, warm, and fluffy homemade soft pretzels with a slightly salty crust, perfect for any occasion.
Ingredients
- 2 and 1/4 tsp active dry yeast
- 2 tbsp brown sugar
- 1 and 1/2 cups warm water
- 4 and 1/2 cups flour
- 1/4 cup olive oil
- 2 tsp salt
- 6 cups water
- 2 tbsp baking soda
- 1 egg
- Coarse salt (for topping)
- Everything but the bagel seasoning (for topping)
Instructions
- Combine the warm water, yeast, and sugar in the bowl of your stand mixer. Whisk well and then let sit for 5-10 minutes, or until foamy and bubbly.
- Add the flour, olive oil, and salt to the same bowl. Attach the kneading tool and knead the mixture for about five minutes on low speed, or until the dough forms a ball that springs back when touched.
- Remove the dough from the bowl and drizzle with a little olive oil. Put the dough back in the bowl and cover it with a damp cloth. Let it rise in a warm spot for about an hour, or until it doubles in size.
- Punch down the dough. Divide it into 12 equal pieces using a bench scraper or a sharp knife on a floured surface.
- Roll each piece into a rope, roughly 18-24 inches long, and shape it into a pretzel.
- Preheat your oven to 450°F (232°C).
- Boil a pot of water mixed with baking soda. Once it’s boiling, dip each pretzel into the water for 15-30 seconds, then transfer them to a parchment-lined baking sheet.
- Brush each pretzel with an egg wash and sprinkle with coarse salt and everything but the bagel seasoning.
- Bake the pretzels in the oven for 10-11 minutes, or until they are golden brown.
- Remove them from the oven and let cool on a wire rack.
Notes
Ensure the water is around 110°F (43°C) when activating the yeast for best results. Experiment with toppings for a personal touch.
