Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 2 cups diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups cooked beans or lentils (optional)
- Chopped fresh parsley for garnish
Instructions
- In a slow cooker, heat the olive oil and sauté the onion, carrots, and celery until soft.
- Add the garlic and cook for an additional minute.
- Pour in the broth and add the diced tomatoes, thyme, basil, salt, and pepper.
- If using, add cooked beans or lentils.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to use any vegetables you have on hand. For extra flavor, sauté the vegetables in your pot instead of using a slow cooker. Adjust the soup’s consistency by adding more broth if it’s too thick.
