Description

A comforting and flavorful homemade soup, perfect for using up leftover vegetables and pantry staples.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 2 cups diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups cooked beans or lentils (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. In a slow cooker, heat the olive oil and sauté the onion, carrots, and celery until soft.
  2. Add the garlic and cook for an additional minute.
  3. Pour in the broth and add the diced tomatoes, thyme, basil, salt, and pepper.
  4. If using, add cooked beans or lentils.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.

Notes

Feel free to use any vegetables you have on hand. For extra flavor, sauté the vegetables in your pot instead of using a slow cooker. Adjust the soup’s consistency by adding more broth if it’s too thick.
