Description

A delightful one-pot meal combining savory chicken, fluffy rice, and honey BBQ flavors, perfect for busy weekdays.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove the chicken and set it aside.
  3. In a bowl, mix together the BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes.
  5. Add the chicken broth and half of the sauce to the pan. Stir to combine.
  6. Return the chicken to the pan and pour the remaining sauce over the top.
  7. Cover and simmer on low heat for 15 minutes.
  8. Add mixed vegetables if desired, cover again, and cook for another 5 minutes or until the rice is tender and the chicken is fully cooked.
  9. Let the dish sit for 5 minutes. Garnish with chopped green onions and serve hot.

Notes

For extra flavor, marinate the chicken in barbecue sauce and honey for a few hours before cooking. Customize your dish with your favorite vegetables.
