Ingredients

  • 2 pounds carrots, peeled and cut into 1.5-inch diagonal pieces
  • 1/4 cup honey
  • 3 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 34 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon (optional)
  • Fresh parsley or chives for garnish


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel carrots and cut into 1 to 1.5-inch diagonal pieces.
  3. Combine carrots with melted butter, honey, olive oil, garlic, salt, pepper, and cinnamon.
  4. Toss until carrots are fully coated.
  5. Spread carrots on a baking sheet in an even layer.
  6. Roast for 20–25 minutes, tossing halfway through.
  7. Remove when tender with caramelized edges.
  8. Transfer to a serving dish and garnish with parsley or chives.
