Ingredients
- 2 pounds carrots, peeled and cut into 1.5-inch diagonal pieces
- 1/4 cup honey
- 3 tablespoons butter, melted
- 1 tablespoon olive oil
- 3–4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cinnamon (optional)
- Fresh parsley or chives for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Peel carrots and cut into 1 to 1.5-inch diagonal pieces.
- Combine carrots with melted butter, honey, olive oil, garlic, salt, pepper, and cinnamon.
- Toss until carrots are fully coated.
- Spread carrots on a baking sheet in an even layer.
- Roast for 20–25 minutes, tossing halfway through.
- Remove when tender with caramelized edges.
- Transfer to a serving dish and garnish with parsley or chives.
