Ingredients
- 8 large eggs
- 6 strips bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- Cook the chopped bacon in a skillet until crispy.
- Remove the bacon and set it aside, leaving the bacon fat in the skillet.
- Add the diced potatoes to the same skillet and cook until golden brown.
- In a bowl, whisk together the eggs and heavy cream.
- Add salt and pepper to the egg mixture.
- Pour the egg mixture over the cooked potatoes in the skillet.
- Sprinkle the crispy bacon and grated cheese on top.
- Cook on the stovetop for 3 minutes to start setting the edges.
- Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes or until the frittata is set in the middle.
- Garnish with fresh chives before serving.
Notes
Use a non-stick skillet to prevent sticking and enhance texture. Feel free to customize with different vegetables or cheeses.
