Description

A delightful and flavorful frittata made with eggs, bacon, and potatoes, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F.
  2. Cook the chopped bacon in a skillet until crispy.
  3. Remove the bacon and set it aside, leaving the bacon fat in the skillet.
  4. Add the diced potatoes to the same skillet and cook until golden brown.
  5. In a bowl, whisk together the eggs and heavy cream.
  6. Add salt and pepper to the egg mixture.
  7. Pour the egg mixture over the cooked potatoes in the skillet.
  8. Sprinkle the crispy bacon and grated cheese on top.
  9. Cook on the stovetop for 3 minutes to start setting the edges.
  10. Transfer the skillet to the preheated oven.
  11. Bake for 15-20 minutes or until the frittata is set in the middle.
  12. Garnish with fresh chives before serving.

Notes
