  • 34 lbs beef brisket (flat cut preferred)
  • 1 tbsp kosher salt
  • 2 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground cumin
  • ½ tsp cayenne pepper (optional)
  • 1 cup beef broth
  • 1 onion, quartered
  • 3 cloves garlic, crushed
  • 2 carrots, chopped
  • 2 tbsp olive oil
  • 1/4 cup soy sauce or Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar or honey

Instructions

  1. Trim excess fat from brisket, pat dry, and apply dry rub. Let it rest for at least 30 minutes.
  2. Set Instant Pot to ‘Sauté’ mode. Add olive oil and sear brisket 3–4 minutes per side until browned. Remove brisket.
  3. Add onion, garlic, and carrots to the pot and sauté for 2–3 minutes.
  4. Deglaze with soy sauce and vinegar, scraping up browned bits.
  5. Add beef broth, brown sugar, and return brisket to pot.
  6. Seal the lid and pressure cook on High for 65–70 minutes (for 3–3.5 lbs brisket).
  7. Let pressure naturally release for 20 minutes.
  8. Remove brisket, let rest 10 minutes, then slice against the grain.
  9. Optionally, simmer cooking liquid to reduce into a sauce and pour over sliced brisket.

Notes

Always use natural pressure release for best texture. This recipe works best with the flat cut of brisket but can be adapted for point cut if desired.
