Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 cups vegetable broth
- 1 potato, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.
- Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes until the vegetables start to soften.
- Pour in the vegetable broth and add the diced potato, oregano, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 20 minutes or until all the vegetables are tender.
- Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
