Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cups vegetable broth
  • 1 potato, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.
  2. Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and add the diced potato, oregano, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for about 20 minutes or until all the vegetables are tender.
  5. Adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.
