Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 6 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrots and celery, cook for another 5 minutes.
- Stir in zucchini, vegetable broth, oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, use homemade vegetable broth or add cooked pasta or beans for a heartier meal.
