Ingredients
- 4 jalapeños, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, sauté the diced jalapeños, onion, and garlic over medium heat until the onion is translucent.
- Add the chicken or vegetable broth and bring to a simmer.
- Stir in the cream cheese, cheddar cheese, and milk.
- Add paprika, salt, and pepper. Mix until the cheeses are melted and the soup is creamy.

Notes
For a spicier soup, leave some of the seeds in the jalapeños. Use freshly grated cheese for better melting. You can blend the soup for a smoother consistency if desired.
