Description

Fluffy, light, and delightful Japanese Soufflé Pancakes perfect for breakfast or brunch.


Ingredients

  • 2 large eggs
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Whipped cream (for serving)
  • Fresh berries (for serving)


Instructions

  1. In a bowl, separate the egg yolks from the whites.
  2. In a separate bowl, whisk the egg yolks, sugar, and vanilla extract until combined.
  3. Add the milk and mix well.
  4. Sift the flour and baking powder into the egg mixture and stir until smooth.
  5. In another bowl, beat the egg whites and salt until stiff peaks form.
  6. Gently fold the egg whites into the batter until combined.
  7. Heat a non-stick skillet over low heat and grease it lightly.
  8. Pour small portions of batter onto the skillet and cover with a lid.
  9. Cook for about 4-5 minutes until the bottom is golden, then flip gently and cook for another 4-5 minutes.
  10. Serve warm topped with whipped cream and fresh berries.

Notes

For added sweetness, drizzle maple syrup or honey over pancakes before serving.
