Description

A refreshing and colorful pasta salad that combines the flavors of street corn with zesty dressing, perfect for summer gatherings.


Ingredients

  • 2 cups cooked pasta
  • 1 cup corn (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 cup cilantro, chopped
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: crumbled feta cheese


Instructions

  1. Combine the cooked pasta, corn, cherry tomatoes, bell pepper, red onion, and cilantro in a large bowl.
  2. Whisk together lime juice, olive oil, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the pasta salad and mix well to combine.
  4. Taste and adjust seasoning if necessary.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For the best flavor, use fresh corn. Adjust the vegetables based on what you have on hand. Can add diced jalapeños for spice.
