Description

A delicious and easy keto casserole that’s creamy, cheesy, and packed with flavor from garlic and mushrooms, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil over medium heat in a large skillet. Add sliced mushrooms and sauté until softened, about 5-7 minutes.
  3. Add minced garlic and cook for an additional 1-2 minutes.
  4. Combine shredded chicken, sautéed mushrooms, heavy cream, and half of the shredded cheese in a mixing bowl. Season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish.
  6. Sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh parsley before serving.

Notes

Best served hot, pairs well with a green salad or steamed vegetables. Leftovers can be stored for up to 3 days in the fridge.
