A delicious and easy keto casserole that’s creamy, cheesy, and packed with flavor from garlic and mushrooms, perfect for busy weeknights.
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil over medium heat in a large skillet. Add sliced mushrooms and sauté until softened, about 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes.
- Combine shredded chicken, sautéed mushrooms, heavy cream, and half of the shredded cheese in a mixing bowl. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish.
- Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
Best served hot, pairs well with a green salad or steamed vegetables. Leftovers can be stored for up to 3 days in the fridge.
