Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a shallow bowl, mix the Parmesan cheese with a little salt and pepper.
  4. Coat each chicken breast in the Parmesan mixture.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Brown the chicken breasts on both sides for about 3-4 minutes each.
  7. Remove the chicken from the skillet and set aside.
  8. In the same skillet, melt the butter and add the minced garlic. Sauté until fragrant (about 1 minute).
  9. Stir in the lemon juice and lemon zest, then return the chicken to the skillet.
  10. Spoon the sauce over the chicken.
  11. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through.
  12. Garnish with chopped parsley before serving.

Notes

For extra flavor, consider adding capers or olives. Use fresh lemon juice and zest for the best taste.
