Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a shallow bowl, mix the Parmesan cheese with a little salt and pepper.
- Coat each chicken breast in the Parmesan mixture.
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Brown the chicken breasts on both sides for about 3-4 minutes each.
- Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter and add the minced garlic. Sauté until fragrant (about 1 minute).
- Stir in the lemon juice and lemon zest, then return the chicken to the skillet.
- Spoon the sauce over the chicken.
- Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
For extra flavor, consider adding capers or olives. Use fresh lemon juice and zest for the best taste.
