A flavorful and refreshing bowl featuring zesty lemon and spicy chili grilled chicken paired with a cool cucumber salad and hummus.
Ingredients
- 2 chicken breasts, diced (or whole if preferred)
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 tablespoon honey
- 1 teaspoon chili flakes
- 1 tablespoon lemon juice
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- 1 cup diced cucumber
- ½ cup chopped cherry tomatoes or red bell pepper
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- Salt, to taste
- ½ cup hummus (homemade or store-bought)
- 1 teaspoon olive oil
- ¼ teaspoon smoked paprika or chili powder
Instructions
- Prep the ingredients: Dice the chicken, mince the garlic, and chop the cucumber and tomatoes.
- Marinate the chicken: Combine olive oil, garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper. Coat the chicken and marinate for 20–30 minutes.
- Grill the chicken: For whole breasts, grill for 5–7 minutes per side. For diced chicken in a grill basket, grill for 10–12 minutes, or for skewers, grill for 3–4 minutes per side.
- Make the cucumber salad: Combine cucumber, tomatoes or bell pepper, lemon juice, olive oil, and salt. Toss and set aside.
- Prepare the hummus base: Spread hummus in a bowl, drizzle with olive oil, and sprinkle paprika or chili powder.
- Assemble the bowls: Add grilled chicken over hummus, top with cucumber salad, and garnish with parsley.
- Serve immediately and enjoy!
