Ingredients
- 4 medium carrots, peeled and cut into sticks
- 4 medium parsnips, peeled and cut into sticks
- 3 tablespoons pure maple syrup
- 2 tablespoons melted butter or olive oil
- 1 teaspoon fresh thyme or rosemary
- 1 teaspoon apple cider vinegar or lemon juice (optional)
- Salt and black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cut carrots and parsnips into similar-sized sticks.
- In a bowl, whisk together maple syrup, melted butter or olive oil, salt, pepper, and herbs.
- Toss the vegetables in the glaze until evenly coated.
- Spread in a single layer on a baking sheet, leaving space between pieces.
- Roast for 25–30 minutes, tossing halfway, until tender and caramelized.
- For extra brightness, drizzle with apple cider vinegar or lemon juice before serving.
- Garnish with fresh herbs or flaky sea salt if desired.
Notes
Use medium parsnips for the best texture. Avoid overcrowding the baking sheet to ensure proper caramelization.
