Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and sun-dried tomatoes; sauté for 1-2 minutes.
- Pour in the heavy cream and Italian seasoning, stirring to combine.
- Add the parmesan cheese, stirring until melted and sauce thickens.
- Return the chicken to the skillet, spooning the sauce over the top.
- Simmer for another 5-10 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
Serve over rice or pasta to soak up the sauce. Add extra parmesan cheese for flavor.
