An incredibly flavorful creamy chicken dish with sun-dried tomatoes, perfect for impressing guests or a cozy dinner at home.
Ingredients
- 4 chicken breasts
- 1 cup sun-dried tomatoes in oil, drained
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Place the chicken breasts in the crockpot.
- In a bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 360-420 minutes (6-7 hours) or on high for 180-240 minutes (3-4 hours) until the chicken is cooked through.
- Serve hot, garnished with fresh basil if desired.
Notes
For a lighter version, substitute heavy cream with Greek yogurt or light cream. Chicken thighs can also be used for a juicier texture.
