Description

McGriddle Bites combine pancakes and sausage in a bite-sized form, perfect for busy mornings and customizable to suit your tastes.


Ingredients

  • 1 pound breakfast sausage (regular pork sausage)
  • 2 cups Hungry Jack Pancake Mix (only requiring water)
  • 1 cup water
  • 1/4 cup maple syrup (pure preferred)
  • 1 cup cheddar cheese (shredded from block)
  • 1/4 cup diced jalapeños
  • 1/2 cup blueberries


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet, cook the breakfast sausage over medium heat until fully browned. Drain the grease and set aside.
  3. In a large bowl, mix the pancake mix and water. Stir until combined but do not overmix.
  4. Add the maple syrup, cooked sausage, cheddar cheese, diced jalapeños, and blueberries to the pancake mixture. Mix gently.
  5. Pour the batter into the greased muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  7. Let them cool for a few minutes before removing from the tin.

Notes

Serve warm with extra maple syrup for dipping. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to a month.
