Description

A hearty and satisfying classic meatloaf recipe that’s perfect for family dinners.


Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion (1 cup), finely chopped
  • 1 tsp olive oil
  • 2 large eggs
  • 3 garlic cloves, minced
  • 2 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free bread crumbs)
  • 1/3 cup milk
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 3/4 cup ketchup (for glaze)
  • 1 ½ tsp white vinegar
  • 2 Tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder


Instructions

  1. Start by lining a rimmed baking sheet with parchment paper or foil for easy cleanup. Preheat your oven to 350°F.
  2. Heat a medium skillet over medium heat. Add 1 tsp of olive oil and the chopped onion. Sauté the onions for about 5-7 minutes until softened and golden. Transfer to a plate to cool.
  3. In a large bowl, combine all meatloaf ingredients. Mix well until just combined.
  4. Transfer the meat mixture to the baking sheet, shaping it into a loaf about 8 inches long and 4 inches wide. Bake uncovered at 350°F for 40 minutes.
  5. While the meatloaf is baking, mix together the sauce ingredients in a small bowl.
  6. After 40 minutes, remove the meatloaf from the oven and spread the sauce over the top. Return it to the oven and bake for an additional 20 minutes, or until the internal temperature reaches 160°F. Allow to rest for 10-15 minutes before slicing.

Notes

For added flavor, consider using fresh herbs. You can substitute ground turkey for a lighter option.
