Description

A healthy and flavorful salad packed with protein and fiber from lentils and fresh vegetables, topped with a tangy dressing.


Ingredients

  • 1 cup lentils, rinsed
  • 2 cups water
  • 1/2 red onion, finely chopped
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. In a pot, bring the water to a boil and add the lentils. Reduce heat and simmer for about 20-25 minutes until tender. Drain and let cool.
  2. In a large bowl, combine the cooled lentils, onion, cucumber, bell pepper, tomatoes, parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Rinse lentils before cooking. Customize with additional vegetables or spices as desired.
