Description
A healthy and flavorful salad packed with protein and fiber from lentils and fresh vegetables, topped with a tangy dressing.
Ingredients
- 1 cup lentils, rinsed
- 2 cups water
- 1/2 red onion, finely chopped
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a pot, bring the water to a boil and add the lentils. Reduce heat and simmer for about 20-25 minutes until tender. Drain and let cool.
- In a large bowl, combine the cooled lentils, onion, cucumber, bell pepper, tomatoes, parsley, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
Rinse lentils before cooking. Customize with additional vegetables or spices as desired.
