Ingredients
- 2–4 salmon fillets
- 1 pint cherry tomatoes
- ½ cup sliced kalamata olives
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Zest and juice of 1 lemon
- 1 tsp dried dill or fresh chopped dill
- Salt and pepper to taste
- Optional: crumbled feta, capers, roasted red peppers
Instructions
- Preheat oven to 400°F (200°C).
- Arrange salmon fillets on a parchment-lined baking sheet.
- Scatter tomatoes, olives, and garlic around the fish.
- Drizzle with olive oil and lemon juice. Sprinkle with lemon zest, dill, salt, and pepper.
- Bake for 12–15 minutes or until salmon flakes easily with a fork.
- Sprinkle with feta and serve hot or at room temperature.
