Description

Ingredients

  • 24 salmon fillets
  • 1 pint cherry tomatoes
  • ½ cup sliced kalamata olives
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Zest and juice of 1 lemon
  • 1 tsp dried dill or fresh chopped dill
  • Salt and pepper to taste
  • Optional: crumbled feta, capers, roasted red peppers


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange salmon fillets on a parchment-lined baking sheet.
  3. Scatter tomatoes, olives, and garlic around the fish.
  4. Drizzle with olive oil and lemon juice. Sprinkle with lemon zest, dill, salt, and pepper.
  5. Bake for 12–15 minutes or until salmon flakes easily with a fork.
  6. Sprinkle with feta and serve hot or at room temperature.
