One Pot Healthy Broccoli Mac and Cheese

Description

A nutritious twist on the classic mac and cheese, featuring broccoli and creamy flavors all cooked in one pot for easy cleanup.


Ingredients

  • 2 cups whole milk
  • 1.5 cups water or broth
  • 8 oz pasta of choice
  • 8-10 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee (optional)


Instructions

  1. In a large pot, bring whole milk and water or broth to a boil.
  2. Once boiling, add your pasta and lower the heat to a simmer for about 10 minutes.
  3. After 10 minutes, stir in your finely chopped broccoli and cook for an additional 2-3 minutes, or until both the pasta and broccoli are cooked to your liking.
  4. Remove the pot from heat and stir in cheese, Greek yogurt, and butter or ghee (if using). Mix until the cheese is melted and creamy.

Notes
